When a Sorceress carry's a Nature's Peace ring, does it transfer on its orb/meteor attacks? Or do you have to hit him meelee ?

It does work with spells, yes. All that matters is that whoever deals the killing blow has RIP. This means that if your merc deals the killing blow, the monster won't RIP, no matter how long you've been attacking it while wearing the ring.

Also, hydra counts as a summon, and RIP doesn't transfer over to it.

Does it also work that you hit the monster once, and then switch rings ?

You have to strike the killing blow with that ring equipped. That means if you hit and then switch rings, you have just given that chance up.
