You need one of the weapons that adds to Smite damage. Several
unique scepters have this property, but the ultimate weapon for
wealthy Smiters is of course, Grief. This runeword can add as much as
+400 average damage per hit to the base weapon damage BEFORE
multiplying by off-weapon enhanced damage (i.e. Fanaticism and Strength
modifiers). This is how people get those thousands of points in Smite
damage you hear about.

Are you using a Might merc? They can add substantial off-weapon ED as well.

Most of my melee characters wear Fortitude runeword armor, which adds
an astounding +300% off-weapon enhanced damage.

Also, don't forget about %Deadly Strike and Crushing Blow modifiers.
These can be a lot more useful to Zealots and Smiters that just boosting
the numbers on the Lying Character Screen.
Guillauime's Face helm and Gore Riders boots are staples of these builds.

Depends. The %enhanced damage generally will,
the +damage from Astreon's Ward/Grief/etc. will not.

The only way to be really sure how much damage you character
is inflicting is to test it under controlled conditions.
Start a game, spawn a few monsters at players=1, and kill them.
Note how many hits it takes. Then move up to players=2, spawn
a few more, and repeat. Take copious notes.

Or you could test against a cooperative friend in PvP, but this
has obvious limitations if you are playing hardcore...
...plus PvP adds its own quirks and complexities.
